My mother makes the best salad dressing on the face of the planet. I’m sure you think I’m exaggerating, but really though. Olive oil + red wine vinegar + onion powder + magic and all of a sudden your whole family is standing over the salad in the kitchen before it even makes it’s way to the dining room table. Once I introduced it to my friends in college? Game over. I was summoned to make “Nanc’s dressing” for every salad and sub purchased from that point forward.
That being said, I’ve never been one for pre-made salad dressings. When the functional medicine nutritionist suggested that I no longer use red wine vinegar, I figured I would make an alternate dressing to Nanc’s recipe using real ingredients. Packaged salad dressing didn’t even cross my mind!
I didn’t think much of my new olive oil + apple cider vinegar + dijon mustard combination until very recently when my cousin reached out regarding Whole30 compliant salad dressings. Pre-packaged options have so much crap added to them, and while I’m sure there are Whole30 compliant options, I suggested my newest dressing recipe instead.
Pegan Pick #8? My super simple salad dressing recipe! Three ingredients, total perfection.
- 1 TBSP Olive Oil
- 2 TBSP Apple Cider Vinegar
- Dijon Mustard (Make sure to read your labels for Whole30 compliance)
No need to premix the dressing and please note that a tablespoon might be too much for your size salad, but the only relevant measurement is the 2:1 ratio of apple cider vinegar to olive oil. That’s it!
You can even add the ingredients to your salad in the morning and your lettuce won’t be soggy for lunch. So simple, yet so delicious!
